Happy Thanksgiving!

Hey everyone! I just realized that it’s been one month since I posted my last entry. It’s been a crazy couple of months, busy with work and just exhausted when I get home. I seem to be stuck and can’t get out of this funk, and I half-blame the recent unpredictable weather change for this. This is why I am so thankful for the Thanksgiving holiday, not just because of the much-needed time off, but because of all the cooking and eating I get to do while hanging out with friends and family. It’ll surely cheer me up and break me out of this funky mood!

Thanks for bearing with me during the lack of blog updates. I’m going to use this weekend to FINALLY finish writing the last entry of the Italy trip and also the 5 parts to my Indonesia trip. And I promise to post a new recipe at least once a week!!!

As usual, we will be having Thanksgiving at my parents this year. She roasts the two turkeys (one for dinner and one for leftover epic sandwiches!) and my sister and I bring all the side dishes, everyone else is in charge of bringing their appetites. I’m finally going to start the menu planning today, better late than never! Just in case you are also a procrastinator like me, I leave you with some Cin Cin Let’s Eat favorites for non-traditional Thanksgiving side dishes. (Why add another recipe for green bean casserole or pumpkin pie when you can easily find thousands of them online?)

Pumpkin Ricotta Gnocchi (Perfect if you are only cooking for 4)

Pan-fried Smashed Potatoes

Mushroom Truffle and Cheese Brioche

Smoked Chile Scalloped Sweet Potatoes

Sauteed Kale with Tahini Sauce

Oven-Roasted Wild Mushroom with Goat Cheese and Chile Oil

Pâte a Choux (savory or sweet)

Dessert: Apple Empanadas

Dessert: Pumpkin Whoopie Pies

Dessert: Almond Galette

Dessert: Fried Pumpkin Mochi with Azuki Paste

Drink: Spiced Chocolate Eggnog

Day-after Brunch: Sweet Potato and Butternut Squash Hash
